Peep Pops

For our egg hunt, we like to give each child a thank you gift as they leave. In the past we have give out chocolate bunnies and chocolate crosses but this year I wanted to do something a little different but still involving chocolate. This is a sweet Easter treat made from the world famous Peeps.

They are so easy to make and you can probably find most of the ingredients in your pantry. I hope you give this sweet Easter treat a try. 
For the Coconut Tails
mini marshmallows (cut in halve)
white chocolate chips
sweetened coconut flakes

Melt the white chocolate chips in the microwave. Using a toothpick, pick up a mini marshmallow halve and dip in the chocolate. Let excess drip off and roll in coconut flakes. Set aside to harden. Repeat until done.

For the Chocolate Dipped Bunnies
marshmallow bunny peeps
lollipop sticks
semi-sweet chocolate chips
coconut tails
plate or cookie sheet lined with parchment paper

Push a lollipop stick through the bottom of the bunny, making sure not to go through the ears. Set aside. Melt the chocolate over a double boiler. To make a double boiler place a metal bowl on top of a saucepan filled with water. The water should barely touch the bottom of the bowl. Heat water on medium heat. Stir the chocolate often with a rubber spatula. Chocolate retains its shape when melted, so the only way to know if its melted is to stir it, otherwise it can burn.

Remove bowl of melted chocolate and place on the counter. Dip the peeps unto the chocolate, coating all sides. Allow excess to dip off. Remove the remaining excess chocolate off the back and between the ears by scraping it with your rubber spatula. Place peep on your parchment lined cookie sheet and add a coconut tail. Once all peeps are complete, set cookie sheet into the refrigerator to harden.

Once the chocolate has harden, remove from refrigerator. Enjoy! If you are giving these out as treats you can wrap each one in a cellophane bag and tie with a pretty ribbon.

Tip :: If you notice your chocolate starting to thicken, place back on top of your saucepan of simmering water and melt it back down.
